Cauliflower-Creamed Spinach Recipe

There's something about the cooler weather that excites my appetite for new recipes. And with less time dedicated to training in the fall, I have more time to devote to cooking. Since I don't like following recipes, I like to get inspired by the food that I have in my kitchen and then I find a recipe that will allow me to be creative with my ingredients. After googling "spinach and cauliflower vegetarian recipe," I clicked on the first website that I came across - Seriouseats.com   I adapted the recipe just a little and the final product turned out amazingly delicious. I paired the cauliflower spinach mix with roasted potatoes, hardboiled eggs and a sprinkle of cashews. Enjoy! Ingredients 1 small head cauliflower florets 1/2 cup milk  1 tbsp coconut oil 1 cup chopped white onion 3 medium garlic cloves - minced 1/2 tsp freshly grated nutmeg (I used this in my dish but next time, I will leave this out) 2 small packages frozen (and defrosted) spinach Salt/pepp

Making the time to meal plan

Sitting down to a home-cooked meal is a great feeling, especially after a tough workout or a long day of work. But sadly, in our society, making the time to cook a meal is not an everyday occurrence for a variety of reasons: Being too tired or too hungry Needing something quick and convenient Feeling too busy Not knowing what to eat  No love for cooking No appetite If you are like everyone else, you already have a lot to squeeze into the day so it's easy to see why your meals may be an afterthought, especially if you wake up at 4am to workout and you don't come home from work until 7pm. But is that a reason not to cook/meal prep or an excuse?  Meal prep/cooking should be a priority in your day. Just like working out, going to work, playing with your kids and sleeping, cooking/meal prep should be on your daily to-do list. 2017 Hincapie Gran Fondo - event recap

I have been looking forward to the 2017 Hincapie Gran Fondo event for the entire past year. The idea of only riding my bike (no swim or run), with lots of other cyclists, on some of the most challenges climbs in and around our area, makes for a great way to spend a Saturday. Plus, I had so much fun in 2016 participating in this event that I couldn't wait to do all 80-miles and 8000 feet of climbing again in 2017. And after completing Ironman Chattanooga in late September, it was motivating for me to have another event on the calendar to conclude my 2017 racing season - even if only a bike event. Since I didn't know what to expect last year, I was surprised to see my name listed as 4th place overall female. I guess all of the selfies and pictures that I took throughout the race kept me from being on the podium.
